Wiaw While Packing for College (Pumpkin recipe)

Hello my fellow bloggers. It’s time for another WIAW from Peas and Crayons!

This week’s pictures are brought to you in a mix of shopping and packing for college (mostly shopping and no packing at this point though…).

Staple #1: Garage Sales

In the picture above I spent about 28 dollars on a rolling table, Raplh Lauren shirt, Aeropostale sweatshirt, two dress jackets, 1 dressy pair of pants, an old clue game, Treasure Island, Little Women, Shakespeare, 1 glass bowl, 1 ceramic bowl, 1 large pink cup, a mini stapler, brand new Casino Royale dvd and a large bag of kale (technically free!).

Staple #2: New Glasses

I lost my old pair a few years ago and have relied on my contacts since. These will be nice during late night reading or studying.

Staple #3: Video Game + Munchies

It's Pacman!

Deformed food is awesome, and when shaped like Pacman it’s even better.

Staple #4: Pumpkin

I have been digging pumpkin lately so I thought I’d share with you my two latest recipes. One sweet, one savory.

Sweet Pumpkin Microwave Muffin

Serves 1

High in protein, no added sugar, allergy-free

Sorry for the messy picture!

Ingredients:

1/4 cup canned pumpkin puree
1/4 cup brown rice protein powder
1 packet stevia
1/4 tsp sodium-free baking powder
Water as needed
Cranberries (optional)

Directions:
Combine all of the ingredients together in a small microwave-safe bowl. Add water as needed to mix until wet, but not liquidy. Cook for 1-2 minutes depending on desired texture.

Savory Microwave Pumpkin Bread

Nice break from sweet goods.

Serves 1

High in protein, no added sugar, allergy-free

1/4 tsp sodium-free baking powder
Water as needed

Directions: Combine all of the ingredients together in a small microwave-safe bowl. Add water as needed to mix until wet, but not liquidy. Cook for 1-2 minutes depending on desired texture.

  1. I love all the pumpkin recipes you have! The bread looks delicious! Lately I have been obsessed with gluten-free oats and dates. I go through food phases quite frequently though.

    • I was obsessed with oatmeal and dates! I’m beginning to think that I can’t tolerate any grains right now though, so I’ve stayed away. I like making recipes and substituting sugar with date puree.
