Marvelous is My First Weekend Off (WIR)

I’m excited to say that my first year at college is officially complete. Three of my teachers have yet to submit grades yet, but so far things are looking great. I plan on spending my next two weeks before my summer internship starts relaxing with my family, friends and pets.

Here is a short review to give you and idea of my last week at school and my first weekend off for summer break, courtesy of Meghan’s link-up:

  • Last week I spent most of my time studying.

  • The rest of the time I spent reading blogs, taking care of last minute scholarship requirements, and cleaning up my dorm room.

  • On Tuesday I took my Physics exam, on Thursday my Statistics exam, and on Friday my MIS exam.

  • When I was finally finished with all of my tests, I was actually kind of upset…

  • Oh, who am I kidding?! I was ecstatic to be finished!
  • After my final exam on Friday I went to the convenience store to use up the rest of my leftover meal plan dollars from the fall on snacks for my brother.

  • Then my dad came and helped me pack up everything. We also had to de-loft my bed… WAY harder than it sounds 😦 And boy do I wish that the moving truck below was our own, because that sure would have been nice. Especially if it came with two or three surly dudes who would be thrilled with carrying out my microwave and pounds of clothing.

  • This past weekend my dad has been working on tilling up the ground in preparation for our vegetable garden.

  • We’re also working on possibly opening up our pool soon!

  • And that’s basically my past week in review. Today I also had the opportunity to make some stuffed squash for my parents and retake the pictures so that I could share the recipe with you all.

Sausage Stuffed Acorn Squash

Grain/Gluten/Wheat-Free, Egg/Dairy-Free, Nut/Peanut-Free, Nightshade-Free, Sugar-Free, Vegan Suggestions in Notes*

Two Servings

Ingredients:

  • 1 acorn squash (or any winter squash you have on hand)
  • 1 pound grass-fed ground beef*
  • 2 tsp of fresh or 1/2 tsp of dried rosemary, thyme, sage, garlic/onion powder (whatever herbs you have on hand. Cayenne or cinnamon would add a nice kick too)
  • Ghee/Coconut Oil
  • About 1-2 cups diced vegetables (onions, peppers, mushrooms, broccoli slaw would all be great options)

Directions:

  1. Preheat oven to 400 degrees.
  2. Place the acorn squash whole on a parchment-covered baking sheet and bake for approximately 1 hour 30 minutes or until soft.
  3. Remove the acorn squash from the oven and let cool slightly.
  4. Meanwhile, heat a skillet over medium-high heat. Coat with the ghee/coconut oil and cook the ground beef until almost done. Add the seasonings and stir to combine.
  5. Then add the chopped vegetables and cook for about ten more minutes or until tender (cooking time will depend on the vegetables that you use).
  6. Remove the skillet from the stove and let rest while you prepare the squash.
  7. Take your acorn squash and carefully slice it in half. Use a spoon and scrape out the innards (seeds).
  8. Now stuff each squash half with your beef and vegetable mixture. There will probably be some left over depending on the size of your squash.
  9. Enjoy!

*Notes: When I first showed a picture of this stuffed squash on Wednesday, I had a few non-meaters say that they would be interested in the recipe. Now, obviously this recipe as-is is not meat-free, but it’s such an easy one that I don’t want anyone to miss out over such a small ingredient! The most authentic tasting option would to just replace the meat and seasonings with a veggie-version of sausage crumbles. However, you could also replace the ground beef itself with about 2 cups of textured vegetable protein, still adding in the seasonings and vegetables like the recipe calls for. Other great vegetarian/vegan options would be to replace the ground beef with 2 cups of scrambled tofu/tempeh, or even cooked quinoa!

    We still have a few more months, but we'll be visiting the states in September for a few weeks.

  2. Wahooo for being done with school! I graduated from college 2 years ago and cannot believe how quickly time went when I was there and since… It’s true what our parents say about time passing by the older we get!

    P.S. That’s so cool about your veggie garden, I’m envious!

    • I felt like high school went by really fast and I bet college will go even more quickly. I hate it when parents are right 😛

      Don’t be envious yet… We’ll see if anything actually comes out. Haha.

  4. Ahhhh yayyyyy for being done!!!! I’ll be done in another week from now and it is KILLING me. I’ve totally done the whole buy everything in the meal plan thing. I always ended up with so many left over, I have no idea how. 2 weeks is the perfect amount of time before your internship so you can love the time with your fam without getting sick of them 😉

      I agree. 2 weeks seems ideal because it seems like a mini vacation. Enough time to relax but not enough time to get settled and stuck in a schedule. Oh, and also perfect for not getting sick of my family. Not that that has ever happened before 😉

      All of the snacks are gone now. Most of them were consumed before Friday night was even over. Lol. As soon as I mentioned no-bake cookies my brother was all over them.

  6. Wow you have a huge garden! And I love that you’re going to have a vegetable patch, amazing. I’d love one of those but honestly I’m so bad at gardening it’d probably all die. In my head I’m like Jamie Oliver with growing and cooking things. In reality, not so much.
    When I moved out from university my dad had to hire a van to take all my stuff home. I couldn’t believe how much stuff I had acquired over such a short period of time…

    • Lol, yes. My dad may have been a little over ambitious with the size of that thing. Either way, I hope we get to planting soon and get some good vegetables! I think we have the same mindset as you– lots of thinking and not so much doing in real life.

      I can’t even imagine how much junk I’ll have at the end of four or five years seeing how much I have after only one!

  7. Yay for being done with your first year of college! I graduated with my undergrad two years ago but am back in grad school now so most of my weekend was spent studying. That huge are for a vegetable garden looks awesome! I am hoping to plant a fee potted veggies this summer.

    • Good luck with grad school. That’s a major accomplishment and undertaking!

      I hope to take a few herb plants up with me to my sublet this summer. Not sure how long they’ll last though…. I have a tendency to “forget” 😉

  8. Yay!! Congrats on being done, girl 🙂 I’m so glad that you’re going to enjoy the next few weeks with your family…you’ve more than earned it! I agree with Jessie…2nd and 3rd years are more fun than the first…I also enjoyed my last semester 4th year too…lots of crazy times with my friends 😛

    • Aw, thanks Caitlin! I’m hoping all of my years are good, but my sentiments were the same for high school. Last semester was definitely a blast. Thanks for giving me something to look forward to! A light at the end of the tunnel if you will 🙂

  9. Congratulations on being done!!!!!!!!!!!!!! That’s huge and you must feel so great.
    I am loving what your father is doing to the backyard…gardening, planting and opening the pool. When should I come over? Is now too soon? 😉
    I still remember how my dad moved me out of the dorm. He gave a case of beer to any students willing to help. It worked like a charm, although I’m not sure about the whole underage drinking thing. I’m pretty sure he didn’t check ID’s.

      Never too soon for you 😉 I hope we get the pool open so I can take at least one dip before I leave. If not though, at least that will be a good reason to come home often. Haha.

      We have a no alcohol policy so that probably wouldn’t go over too well with RAs. Lol. But I like the way your dad thinks. Who says that the same wouldn’t work for homemade cupcakes?! 😉

      And thanks for the compliment! I’m super proud of those photos even if they aren’t nearly perfect. A major improvement from some of my fuzzy photos previously. Natural sunlight is AWESOME.

  10. I LOVE all of the space you have for a vegetable garden. Not gonna lie – I’m really jealous! I cannot wait until Marty and I have more space to garden! Also, leaving college is bittersweet! I can definitely relate to the feeling. I never lived in a dorm but when school was out for the summer, I still felt a small bit of sadness!

  12. CONGRATS on being done! I did the same exact thing with my leftover meals freshman year, except we were able to convert them to cash to be used at some places downtown. I treated my fam and friend to lunch during move-out time 😀
