Marvelous is One Week Left

As per my title, I am one week down with one week left to go until my internship! This week I’ll be cleaning up all of my stuff from college while simultaneously packing in preparation to move into my new apartment.

Here’s how I spent last week, courtesy of Week in Review with Meghan:

The weather was so beautiful and warm all week long. Even though I didn’t make it into town much, I made sure to go outside everyday and soak up the sunshine. Some days I went out on our deck to read the two books that I mentioned on Friday (I am actually half way through another book that I’ll share about soon!).

On Thursday I finally ventured out into the real world to get a much-needed haircut. Here’s a before and after for comparison. Even with a nice trim though, my hair is still quite frizzy from all the heat. (Any tips to combat the humidity that doesn’t involve a full bucket of hair product? 😉 )

Friday morning I got ready earlier than usual to to attend my brother’s National Honors Society induction ceremony at 8:00 AM.

Then after I had lunch on Friday I drove into town to hang out with my friends at Taco Bell. We chatted for a little while and I headed to my old high school to help out with a track meet. Unfortunately it was raining so not many people came out for it, but fortunately for me that meant they had plenty of people in the concession stand and didn’t need my assistance!

I could definitely feel the effects of being cooped up all week in the house so come Saturday when my mom was home we went shopping!… Okay, so it was mostly grocery shopping, but it was still a bunch of fun. Here are a few things that I found at Meijer that I got quite the kick out of:

Later Saturday we also went looking for Mother’s Day presents for my grandma and aunt at the local nursery. I picked out the bottom purple/white hanging basket and my mom found the top basket full of red/pink/white flowers.

With my brother gone to a friends house and my dad asleep on the couch, my mom and I were free to pick whatever we wanted to watch on TV. We pulled up our instant cue on Netflix and found a pretty good movie to watch: My Boyfriend’s Girlfriend. Overall it was cute. Nothing spectacular. Just an overall feel-good film (shout out to Alyssa Milano from Charmed— one of my favorite tv shows in Middle School!).

Come Sunday morning I whipped up a new batch of pancakes for Mother’s Day (my dad got some too 😉 ). They’re really versatile and are great with pretty much any type of fruit!

Grain-Free Coconut Banana Pancakes

Grain/Gluten/Wheat-Free, Dairy-Free, Vegetarian, High Fiber, No Sugar Added, Paleo, GAPS-Friendly

Makes Two Servings (4-6 small pancakes each)

Ingredients:

  • 4 eggs
  • 2 ripe bananas
  • 1 tsp vinegar
  • 1/2 tsp vanilla extract
  • dash of salt
  • dash of cinnamon
  • 5 tbsp coconut flour
  • Optional fruit: blueberries, bananas or apples

Directions:

  1. Separate the eggs placing the egg whites into a food processor and the yolks into a small bowl.
  2. Whip the egg whites until they are white and stiff. Then add the remaining ingredients (including the yolks) until smooth.
  3. Heat a skillet over medium heat. Coat in ghee or coconut oil to prevent sticking.
  4. Using a 1/4 c. measuring cup pour out the batter into the skillet. Cook for approximately 2 minutes until the uncooked side is bubbly. If you want to add blueberries put them on the pancakes now.
  5. Flip the pancake and cook for an addition 1-2 minutes or until done.
  6. Repeat with the remaining batter and top with pan-seared apple slices, fresh banana chunks, and/or a drizzle of honey! Enjoy.

After breakfast my dad, mom, brother and I got ready and met up with about 15 other family members to celebrate Mother’s Day at a Chinese buffet again. Then the four of us watched Iron Man 3! If you haven’t seen it, you should. It wasn’t as good as the first Robert Downey Jr. Iron Man, but it was way better than the sequel. Plus, Gwenyth Paltrow’s role as Pepper Pots takes a pretty interesting turn in the movie! (No Spoilers here 🙂 ).

Now it’s Sunday night and I’m about to hit “Publish.” Tomorrow my plans include some more unpacking and watching The Great Gatsby with some other friends at a matinee.

I also wasted many (try six) hours this week watching The Voice and American Idol with my fan-girl mother. Here are a few of my thoughts in bullet form:

  • Nikki Minaj just needs to go.

  • Keith Urban is so cool with his Aussie accent.

  • The Voice beats out American Idol 10 to 1. No question.
  • Mariah Carey– what kind of music video was that? I didn’t even realize until half way through that she hadn’t even sung a note until my dad commented on it. And then she just flung up her skirt and sang a few lines for the rest of the time. No words.
  • Now I remember why I stopped watching these shows.
  • Please don’t ever bring back Christina or Cee Lo. It’s so refreshing to have genuinely nice people (Usher and Shakira).

  • Why is Nikki Minaj still here?

Also, we had a momentary freak out when my dog ate a coffee bean last night when as my brother was trying to glue some down to his poster about Brazil for Spanish. A quick search confirmed that yes- coffee beans are toxic to dogs, but alas our puppy is still alive and kicking. All good here 🙂

  1. I remember when I was back from university during the summer and I’d get so bored at home when everyone else was at work or still at Uni. I know what you mean when you feel a bit cabin fevery! Just going for food shopping is enough to excite the day hehe.
    I really want to see The Great Gatsby. It looks so good and has Leo in it – perfect 🙂

    • It’s actually pretty sad, but yes, food shopping was pretty exciting. 😀

      I just came from the theater and I’m speechless. I’ll just say that I don’t exactly like everything that happened it, but I realize they were just following the book. All of the actors, dancers, sets, writers were excellent! Leo is amazing as always 😉

  2. I cannot wait to see Iron Man 3. And I love the look of those pancakes.Especially with the apple and honey. YUM.And your hair looks fabulous! If you ever get any tips about how to deal with frizz, let me know. I have the same problem, but in winter.

    • I’m pretty sure that you’ll like Iron Man 3 with how much I know you loved the Avengers (right? 😀 ).

      I have this problem in the summer from humidity and in the winter from being dry, so I know how you feel. I’ll definitely let you know if I discover the secret to perfect, defrizzed hair!

  3. Unfortunately Iron Man isn’t out in theaters over here.. but you bet your balls (ok i know you don’t have any), that when it does come I’ll be parked in one of those comfy reclining chairs with a bag of popcorn (or twizzlers) in my hand drooling over Robert Downey Jr. the whole entire time 🙂

    • What movies do you have out over there? Are they just a limited selection of the ones from the states? Maybe it’s naive of me to think that Iron Man would be pretty popular everywhere 🙂

    • Yep. I just peeled and sliced some apple slices and cooked them in a pan with some coconut oil while I was cooking the pancakes. I flipped them halfway through to cook both sides and they ended up being done right on time.

  4. Your haircut is really cute!!! I’ve seen that movie and felt the same way you did. It was okay, but it wasn’t anything special. There are plenty of other chick flicks I’d rather watch 🙂

      If I had the choice to go back I’d probably watch it again, but it just doesn’t hold a candle to my all-time favorite romantic comedies like How to Lose a Guy in 10 Days!

    • Flowers are great for brightening up any space! We had some lilacs in our living room until the pollen started bothering everyone. Lol.

      Ya, it made me uncomfortable just having to look at her outfits!

  5. Congrats to your brother for getting inducted into NHS! My sis was actively involved in the club at her high school. I’m surprised the ceremony was so early in the morning. You would think it would be more of an evening thing :P.

    • Thanks P. I was Vice-President of NHS in high school so I’m really proud of my brother for getting inducted too.

      It’s always been in the morning but now that you mention it, that is kind of strange. Hmm 😛

  6. Oy. If you do find any good way to combat humidity, let me know. The only way I know of is to let my hair air dry and then whip it up into a ponytail as quickly as possible to avoid a hair halo! 😉

      A ponytail is basically a permanent fixture for me during the summer. But like you said– air drying first is ESSENTIAL. I’ve tried putting it up wet and boy was that a mess!

  7. Those pancakes cound amazing! Highlight from the weekend was definitely hanging out with a friend who was doing army training nearby. He ships out to Afghanistan in August, so it was great to see him before he leaves!

  8. I do not like Nicki Minaj at all either. And the Voice is a really great show. I actually don’t tune in to regular TV too often (I mostly watch Netflix) but if the Voice is on, I’ll usually try to catch it. Also, your pancakes look delicious and I think I’d love them with some peaches. Great idea on the heated apple slices.

    • I usually don’t watch regular TV either, just Netflix or Hulu. And we only have antenna at home so The Voice and American Idol are like the only things on at night 😦

      I think peach season is coming up soon. These pancakes would be amazing with some sliced peaches!

  9. Lawlz @ your Nicki Minaj comments! I don’t watch American Idol anymore (I wasn’t even aware that it was still on the air up until a few days ago), but I’m obsessed with the Voice this season. I loved season 1, but after that it just kind of got old…until Usher and Shakira came along! They fit in so well with Adam and Blake. I’ve legitimately never laughed as hard during the Voice episodes as I have watching season 4!

    • I’m glad to hear that everyone else agrees about Nikki Minaj. From the show I thought everyone just loved her and I just did. not. understand. Haha.

      I agree- Usher and Shakira brought kind of a new energy to the show and I like how the four of them interact so much better now.

  10. Hahaha ok i need one of those journals…the covers looked amazing! And if i wore makeup, i would definitely demand that makeup bag too 😛 your hair looks gorgeous, girl! Looks like it was quite the weekend for haircuts 😉 i have no advice about the frizziness, though…my hair does the same thing in the humidity, so I’ve given up looking cute in the warm weather months!

    • I know, right? I think my favorite was the makeup bag saying “Contents of my face.” I seriously got the biggest kick out of that 😀

  11. I don’t think I have seen any of the Iron Man movies…ooops. The new one does look really good though! I know the feeling of boredom, all my really good friends are out of state for college so having them home will be fun! Enjoy your last week until your internship!

    • You really need to! 😀 I would say just watch the first, read a synopsis of the second, and watch the third. Lol.

  12. I love the haircut. You look fabulous, and my hair dresser actually uses coconut oil in my hair. Just a smidge to give it texture and take away the frizz. I want to see the new Iron Man movie, but since I’m going on vacation this weekend, it will probably be a while before I can around to it. I love those pancakes, especially when they are covered in cut up fruit. Yum, and those pretty flower baskets. I want to run out and buy mine, but I’m holding back until I get back from vacation. Three cats is enough for me in-laws to take care of without throwing plants into the mix. Ha. Have a great week; enjoy every blissfully free second of it.

      I totally know what you mean about family and pets. My grandma gets to take care of Lilly whenever we’re gone overnight somewhere. When we go to pick her up she is never happy to see us because at my grandma’s house there are other dogs for her to play with 🙂

  13. Those pancakes sound amazing! I also completely agree with your take on mean judges: I know that snark-fests and cat fights supposedly drive up viewership, but I can’t deal with it. I see enough of people being mean and nasty to each other in real life, and I don’t want to deal with it in my entertainment too! I’m all about nice judges, and Shakira seems like a genuinely kind person. Win!

      I hate snark-fests and cat fights too. I will stop watching a show when that happens, reality tv or not. When I watch other people being mean to each other it just ruins my mood and then I get grouchy. Not worth it.

  14. Ooo, interested to hear what book you’re reading now! Also pretty sure I want all those notebooks–too funny! Have you tried using coconut oil in your hair? I know, I know, theoretically for cooking, but I used it for EVERYTHING–lotion, makeup remover, hair tamer, you name it.

    • I’ve actually finished two books since this post. A little kiddish though. I have to admit that I’m still not into reading tons of adult novels despite being technically an “adult.” They make me a little squeamish sometimes. Or else they are as dry as the Sahara 😉

      Meghan suggested coconut oil too! I’m going to have to try it. I use it all the time, even for my teeth!

      • I just use it in place of toothpaste actually! 😀

        Some of the ingredients in my Crest toothpaste brought me some concern so I just looked up some natural versions and coconut oil was one of them. It took awhile to get used to it, but my teeth are actually cleaner than before!
