Marvelous/Not So Marvelous… And an Oatmeal Recipe

Marvelous is… the fact that I found an old bag of black licorice cough drops in our medicine cabinet.

Not so marvelous is… the fact that I even NEED cough drops due to “the plague.” 😉

Marvelous is… watching the first Teenage Mutant Ninja Turtles with my mom.

Not so marvelous is… now I’m craving pizza.

Marvelous is… celebrating one of my friend’s birthdays tomorrow.

Not so marvelous is… if I don’t get over this cold/virus/whatever-it-is I won’t be able to go.

Marvelous is… making breakfast on an actual stove every morning for my parents.

Not so marvelous is… Okay, I can’t really find anything wrong with this oatmeal. Ha.

Banana and Maple Pecan Oatmeal

Banana and Maple Pecan Oatmeal

Gluten/Wheat-Free, Vegan, Nut-Free Option (in Notes below)

Makes 1 serving

Ingredients:

  • 1 cup liquid (1/2 cup water + 1/2 cup milk)
  • 1/2 cup quick oatmeal
  • 1 tbsp ground flaxseed (ground chia would work too)
  • 1 tbsp sweetener
  • 1/2 banana
  • 1/2 tsp cinnamon
  • dash of salt
  • “Maple pecans”: 3 tbsp pecans, 1 tbsp maple syrup, 1/8 tsp cinnamon, dash of salt
  • optional toppings (I used melted almond butter)

Banana and Maple Pecan Oatmeal

Directions:

  1. Heat liquid on high until boiling. Add oatmeal and flaxseed. Reduce heat to medium and stir occasionally for about 5 minutes or until thickened.
  2. Slice the 1/2 banana on top of the oatmeal. Stir and let sit for a minute until the banana gets soft. Using a fork whip the oatmeal incorporating the banana until smooth. Mix in the cinnamon and salt then pour into a bowl.
  3. In the now empty pan put the pecans, maple syrup, cinnamon and salt. Heat on medium until the syrup begins to boil and thicken. Pour onto the oatmeal and top with optional toppings.

Notes: To make this vegan/dairy-free use a dairy-free milk like almond milk or coconut milk. You could also just use all water for the liquid to make it nut-free but it won’t be as creamy. For the nuts, feel free to omit or replace with a nut-free version like sunflower seeds, pepitas, a diced banana or apple.

Marvelous is… doubling the recipe to make it for two.

Not so marvelous is… not having the right-sized pan and the liquid spilling over causing your stove to smoke. My bad.

Like Donatello, you are a brilliant inventor. You may not make all of the Turtles’ gadgets, weapons, and vehicles, like he does, but you’ve got the brains for it! But sometimes you and Donnie are too smart for your own good, like when you’re too busy admiring an enemy’s futuristic laser cannon to run for your lives. But when it comes down to it, it’s other people’s lives that really keep your head in a mission. You fight with your heart, and that makes you a very powerful warrior.

  1. I was completely obsessed with TMNT when I was younger — I actually remember pretending to BE the Turtles with my cousins, and I was always Leonardo when we’d play. Good times 😀

    Sorry to hear that you’re not feeling too well, though 😕 Both my parents took turns being sick around Christmas, and I’m keeping my fingers that it’s not my turn next. Feel better soon!

      Thanks Amanda. I hope your parents are feeling better! Most of my friends were sick too but it was only a three or four day bout for them so I’m crossing my fingers that it’s the same for me.

    I love oatmeal but it seems that I always find a way to make a mess while making it. This recipe sounds amazing so I will risk the mess to make it 🙂

    • My thoughts exactly. I’ve had a stuffy nose and sore throat since my exam week but it didn’t really get more worse than that until a few days ago.

      Oatmeal is definitely worth the mess. It’s basically a guarantee, ESPECIALLY if I make it in the microwave. Haha.

    • Thanks Caitlin. Unfortunately I got worse and wasn’t able to go out with my friends. A fever over 102 will do that to ya. Haha.

      Okay… So I have to say that I am so so sorry that I didn’t get your card out in time. I had every intention and then I got sick and just lost track. 😦 The card from you and Joe was lovely and made me smile so much 😀 I completely forgot you were sending one until my mother handed it to me. It took a minute of me reading over your names until it *clicked* Boy was I out of it 😉

  4. Ugh, being sick is never fun, especially on winter break!! I hope you will be feeling much better soon. That oatmeal looks delicious; I will have to try out the recipe sometime soon. Oatmeal is the perfect breakfast when it gets freezing cold outside in the winter. I have never watched TMNT before, mainly because I rarely watched TV when I was younger. I hope you have a good day, and that you recover swiftly!!

  5. Ahh, love the TMNT!! My favorite was Donatello. (I always said it was because he was the “smart-geeky” one, lol) When my brother and I were little we would use couch cushions to make our own turtle mobile. I hope you feel better soon, that oatmeal looks like it should help!

  6. That oatmeal looks like pure heaven! idk why but when I see oatmeal or really any food with maple syrup I think of Buddy the Elf. Perhaps its because I watched the movie way too many times this Holiday season. Ha Ha! I must say though, your breakfast looks MUCH better than the spaghetti he had. Ha Ha

  7. I realized that I never blogged about cookie baking and early December events on my blog. Oh well. Maybe I’ll share them in a winter recap at some point 🙂 Also, that oatmeal looks really great. I’m sitting here waiting for Marty to come back with oatmeal and now I wish I had pecans and maple syrup to put in it!! YUM!

  8. Anytime sickness is involved, I automatically go plague. It’s so much more dramatic and I hope yours is all gone now and you are off celebrating and gallivanting with your friend.
    I forgot about the TMNT’s obsession with pizza. Way to spawn childhood obesity huh?! I always remember the Vanilla Ice song though: Turtle Power and I suspect I just aged myself considerably. No matter this older woman is about to get gussied up and ready so I can do some of my own celebrating tonight. Happy New Year Madison!

    • I thought about adopting the term “plague” outside of the blog too but my dad kind of overreacts whenever our health is involved so I decided to play it safe. Sadly my body decided to attack itself and rack up a 102.7 temperature so the birthday party was a no-go. Instead I sat on the couch rotating a cold wash cloth on my forehead every five minutes and chugging water. Fun.

      Vanilla Ice… Ya, never heard of them 😉 Kind of sounds like a reference to your self-dubbed Vanilla Gorilla. Bahaha. I love the Turtle Power song though!
