My Weekend Baking Adventures

Did anyone else’s school have fundraisers growing up? Wrapping paper. Candles. Frozen pizzas. Chocolate. Magazines.

My brother is currently in the midst of a magazine fundraiser to raise money for when the high school band goes to Disney this next Spring.

I’m kind of a magazine addict. Really, I should show you all my stacks and drawers of magazines sometime. It’s ridiculous.

Currently I get Eating Well, Cooking Light, Seventeen and Nutrition Action. In the past I’ve also gotten Fitness Magazine and a few other less than stellar choices like Discovery Girls and some dog magazine… From library sales I’ve acquired back issues of magazines as well like Shape, Self, Prevention, Weight Watchers, Health, etc.

The main point of all of this is that I need some advice this year on what to choose. I’m looking for any suggestions on magazines that you’d think that I’d like. Whether they be food, fitness, fashion, whatever. Just leave your suggestion in the comments and I’d be really appreciative!

  • At school before I left for home on Friday I downloaded Part 1 of Harry Potter and The Goblet of Fire on audiobook.

  • Unfortunately I didn’t get to listen to it much though because I was too busy trying not to crash while it rained like crazy. Eventually I had to pull over at an exit and wait for the storm to calm down a bit.

  • When I finally got home I was a little wiped out and decided to not go with my parents to the away football game. Instead I stayed in and made a new recipe. Pumpkin Pie Bars!

  • Saturday was spent just lazing around and hanging with Lilly.

  • We also did some grocery shopping and bought some delicious squash.

  • Later my dad rented Now You See Me from Redbox. It was just as good as I expected!

  • Sunday morning I made another pumpkin recipe… Pumpkin Apple Cinnamon Rolls.

  • And promptly burnt my arm when removing the cookie sheet from the oven. Drat.

  • Before I left for school again I also made some roasted chicken and vegetables. I had a bite of the squash from the vegetables, and some of the chicken de-skinned and it was so good!

  • My parents were super nice and decided to drive part of the way back with me later that day. Surprise surprise though when it started to rain again. Hard. Like on Friday we had to pull over. My dad took the lead and my mom and I followed him in my car until we made it until the half way point where we go our separate ways. We stopped at Wal-Mart while there to get some new windshield wipers for my car.

  • I didn’t get back at school until it was already dark so I didn’t have any time to write up this post last night and instead focused my efforts on Accounting and Astronomy.

In other news, I only have a three day week thanks to a Fall Break at my school. One day down. Two more to go 😀

Hey everyone! Happy Friday 🙂

Before I start my post for today I just want to thank you all for all of your wonderful comments over the past few weeks and sticking with me even though I fall behind with my blogger duties again and again. I just really appreciate it!

I personally have never had a lowcountry boil but after seeing them pop up occasionally on various food blogs I know that I need to try my hand at one. This shrimp boil from Better with Veggies just looks delicious!

Peekaboo Pumpkin Pound Cake from She Knows

There are almost no words for how cute this recipe is. No, it’s not gluten-free, vegan or anything, however it’s just a dang good idea. I’m sure that it would probably work with most pound cake recipes. Just find one that is suitable for your diet and follow the steps from there!

Grain-Free Waffles from Food Renegade

You all know that I’m always on the hunt for grain-free waffle and pancake recipes. I love the ingredient list on this recipe in particular from Food Renegade because it doesn’t require cups upon cups of almond flour. Plus the blogger said the waffles were fluffy! Buzzword for sure.

Again, not allergy-free in the slightest. I just can’t pass up sharing a cookie dough recipe though. Especially one that comes in ice cream cones. *Swoon*

This seems like a great alternative to the ever popular Pinterest recipe that bakes an egg inside an avocado. Whether you are tired of avocados or just plain don’t like them this recipe sounds super easy!

Homemade Caramel Apple Pops from Lily Shop

These just scream Fall/Winter to me. I always got at least one caramel apple sucker in my Halloween bag while trick-or-treating during the fall, and at every home basketball game during the winter when I was younger I would snag one of these from the concession stand.

I also have an awards program tomorrow for my Business College to attend so I will be super busy and might not have a lot of time for comments. Plus I now have a quiz, test and a nice big assignment all due Monday so we’ll have to see how much time I have for blog reading over the weekend as well.

Quite the Collection (WIAW)

Okey dokey. Like I said on Friday’s post, I have a lot to share in the upcoming weeks, so let’s just jump right in and get started. Up first are some recent, random pictures from the end of my summer and the beginning of school.

My mom, being a middle school teacher, started class a few days before me, so I helped her with some back-to-school crafts! (Both Pinterest-inspired of course).

The first one was for her open house. We made all of her students these cute pencils… out of Rolos!! My mom did most of this craft in wrapping the candy rolls in the pink/yellow paper and aluminum foil. I went out and picked up some sticky dots at the dollar store to attach the Hershey kisses. I think the turned out adorable and provided that extra boost of excitement to the beginning of the year.

The next craft we did was for my mom’s fellow teachers. This one was much simpler but extremely useful. Basically she just typed up all of the teacher’s names on her computer in a nice font, printed them out, cut them out, and then I modge-podged the names onto one side of a binder clip. At only $1.00 for a pack, this craft literally cost pennies apiece. As a final precaution I also modge-podged over top of the names to make sure that they didn’t peel off. Within a few hours they were completely dry and ready to go.

There were a few leftover binder clips so I got to keep them. Instead of putting my name on the clips I just took a black permanent marker and decorated them in cool designs. I didn’t think I’d really use them but I’ve already employed one for holding all of my Astronomy homework assignments together.

You can also throw in some school and clothes shopping in there as well, but sadly I don’t have many pictures of that. I can say however that I got some excellent deals. For clothes my mom and I went to our favorite thrift store and each walked out with two huge bags full of name brand clothing in great condition. I think I paid around $65 for about 20 or so things (pants, capris, long sleeve shirts, sweaters, skirts…) and my mom paid a little less (she got a boatload of capris- 10 maybe? All Eddie Bauer, Loft, etc.). For shoes we went to the closest outlet mall about 45 minutes away and I found two pairs of shoes. One pair of new tennis shoes for $35 and another pair of slip-ons for around $!5 when it was all said and done (50% second pair!).

Now let’s move on to the bulk of today’s pictures. No recipes today (sorry!) because as soon as I’m done here I’ve got some Accounting and Statistics homework to work on.

Let’s leave homework out of our minds for just a few more minutes though, okay? I’ve great a great collection here of four things that I’ve made recently and I hope that you all enjoy them!

In order of creation:

Chocolate Pancakes

Or carob pancakes. Whichever you prefer. I just made these based off of my Unbelievably Grain-Free Berry Pancakes (minus the berries), substituting 1/4 cup of carob powder for the almond flour. They turned out well; however next time I will try adding an additional source of moisture like maybe an avocado or an extra banana (we were out of both when I made these for my parents so I couldn’t experiment).

Along with these biscuits I also made up some great sandwiches so I’ll be sure to post about those soon too.

Strawberry and Carob Chip Pancakes

How has the weather been in your area recently? Last week it was positively steaming over here, but thankfully things have cooled down a bit to the mid 70s. It’s also not rained much yet while I’ve been at school, but it was wet at home over the weekend.
