Thinking Out Loud #2

Happy Thursday!

1. I know I said that I probably wouldn’t be doing Thinking Out Loud Thursdays very often, but I liked it so much last week that I couldn’t help participating again this week!

2. Two exams down. Three more to go. Tomorrow morning I have Business Communications at 8:30am and then Astronomy right afterwards at 10:45am. I already have a nap planned for the afternoon somewhere in the neighborhood of 2:00pm.

3. While I am really looking forward to Christmas Break, I don’t like all the work that comes before it. I have to defrost my fridge and mini freezer before Friday. Also we have to do a major cleaning of the common area in our dorm. Fun.

What is your favorite genre of film?

The real question should be- why do I have to pick just ONE? Action, Sci-Fi, Romantic Comedy, Musical, Adventure, Fantasy, Superhero… I think this would be better phrased as what kind of genres I DON’T like. Easy. Horror and Gross rated R comedies.

What is your favorite ever movie?

Boy Arman, are you full of tough questions this week! I would have to go with Harry Potter. And yes I know that there is more than one film in the HP series, and no, I am not going to pick which one I like best.

What movie do you think deserves to have never been made?

You all know my professed hatred for Chitty Chitty Bang Bang and that was the first movie that popped into my mind when reading this question.

However, there is another movie with which I’m not even sure how it was conceived let alone produced. Bubba Ho-Tep.

Wait! Hold up. I just thought of an even worse movie. Jack Black’s Bernie. We literally could not finish it and just skipped to the end so we knew what happened.

What movie should be considered a legal sleeping pill?

The Avengers. Before you all protest, I will acknowledge that the second time I saw the movie it was slightly better, but the plot line was just not good. I fell asleep twice during the movie.

If you made a movie, what would it be about?

I really want to see a new spy series. Jason Bourne, Mission Impossible and James Bond are so good but they all feature older males. It’s time for a new female spy series!

A movie which you love but you’d never admit…

I know that as a superhero fan I am supposed to hate the ones that deviate from the originals,  but I just love Batman and Robin with George Clooney.

5. Somehow I have watched six and counting episodes of Glee tonight. I saw one of the auditions on Youtube and got the sudden urge to rewatch the first season. I just love Rachel and Finn.

Friday Confessions – I May or May Not Have

I haven’t done a Friday Confessions for some time now, but I figured that this would be the best opportunity to share what I may (or may not have) been doing recently.

1. I may or may not have… acquired a tiny sliver of the road rage that I’ve been chiding my mom about for years. People in cities are rude. People driving in cars in cities are CRAZY!

2. I may or may not have… laid back down one day this week after my alarm clock went off. 30 minutes later I woke up extremely worried that I slept in too long and would be late to work. Needless to say that won’t be happening again anytime soon (I hope).

3. I may or may not have… spent all of my break time today internet health diagnosing on the web. I basically typed in every symptom I had and scoured every single webpage that came up trying to figure what could possibly be going on with me.

4. I may or may not be… extremely excited for Pretty Little Liars to return next week. I both love it and hate it at the same time— is that even possible?

5. I may or may not have… an extreme book-buying obsession. Why oh why do I feel the need to buy more books when I already have so many unread ones at home?

6. I may or may not have… not focused quite enough at the Memorial Day Parade on Monday. It was cold. So very very cold. And raining. How could I possibly focus when all I could think about was my frozen toes?!

7. I may or may not have… taken a grocery shopping break during my drive home last week. It took almost five hours, a full two hours longer than it’s supposed to. So about three hours in I stopped at Meijer to pick up some ripe bananas for snacking, a water bottle for drinking, and the Pitch Perfect CD for listening (since my radio has decided to play only two channels, none of which I listen to!).

8. I may or may not have… enjoyed grading tests for my mom over the weekend. I love tests.

Questions for you: What is your Friday confession? Do you have road rage? I still wouldn’t classify myself as having it, but when people cut me off it’s hard not to get mad. If I didn’t hover my foot over the brake at all times I’m not sure I would make it out alive each day. Seriously. Did you have bad traffic last weekend because of Memorial Day? Are there any shows that you are looking forward to this summer? Does anybody else have a book-buying problem like me? What I Made (And Did Not Eat) Wednesday

Well, I think it’s pretty obvious from my update on Friday (by the way- thanks so much for all of your amazing comments and support!) that I will not be eating anything blog-worthy for quite a long time. No matter though, because thankfully my family doesn’t have the same food restrictions as me and are very willing for me to make all of their meals when I’m home 🙂

Today I’m going to share some pictures of what I cooked up this past weekend, and let me know which recipe you’d like to see first!

It just so happens too that I have food for every major meal of the day. Perfect.

Breakfast: Oatless Oatmeal

If you would believe it, my dad doesn’t really miss the bread on his hamburgers or the chips for his salsa since going GAPS. No, he misses the quick and easy… oatmeal. It’s okay. Laugh a little. I sure did when I came home to find two full canisters of oatmeal sitting on our island. It turns out my dad just couldn’t take it anymore and was planning on throwing them out (he just hadn’t gotten to the “throwing them out” step yet as our trash was full 😉 ). When I reminded him that my brother makes himself No-Bake cookies practically every few weeks though, the oatmeal went back into the cupboard. A spark had been lit in my head though and I vowed to make him a bowl of GAPS-approved oatmeal that same weekend.

You may remember if you’ve been reading awhile that I made some allergy-free oatless oats for a snack last summer. This recipe is still grain-free, dairy-free and can be nut/peanut-free as well, but sadly not egg-free. For all of those of you who can eat eggs though (which is probably most of you), you will love the new recipe. Still, I gotta support my allergic peeps here (yes, I really did just call you “peeps”) and say that I’ve read that you can replace the eggs in the recipe with flax egg or tofu, but I of course I can’t guarantee the results!

Lunch: Homemade Ranch Dressing

My mom has been complaining (okay, not really complaining but “mentioning”) for quite a while that her salads just aren’t as enjoyable anymore without a good dressing and all of the homemade recipes that she has tried were less than stellar. When I got home this weekend I made it my mission to change all of that. I did a little research online and got a good idea of some of the ingredients that others put in their ranch dressing recipes. Then I pulled out a whole bunch of stuff from my pantry and got to work. Five minutes later I had something that looked and smelled like ranch dressing. The ultimate test though would be if it actually tasted like ranch dressing. This picture shows a salad that I whipped up for my dad (romaine lettuce mix, diced onion and pepper, sunflower seeds, raisins, chopped grass-fed beef burger) with organic green beans on the side. Of course there was the ranch dressing too.

Thankfully it was a success and my dad was genuinely surprised that it tasted so close to the real thing. I have to admit that I was a little surprised (and relieved) too. It’s so hard to make something and not be able to test it beforehand.

When my mom got home from work later that day she heard of the infamous ranch dressing and asked if there was any left. Um… Whoops. But within a couple of minutes there sure was. Let’s just say that my mom was even more thrilled than my dad and asked for the recipe. Again… Whoops. It turns out my hands have a pretty good memory though and with each dash of “such and such” and spoonful of “this and that” that I threw into the mix we measured out the ingredients and had a solid recipe.

This ranch dressing can also be made allergy-free with one simple substitution, so I’ll make sure to include that in the notes when I eventually post it on this blog.

Supper: Stuffed Acorn Squash

This will be more of a simple How-To. In fact, just from the picture you can probably already guess what the main ingredients will be comprised of. 🙂

Snack: Oh-So-Secret Snack Bars 😉

My mom tried Larabars for the first time on Saturday upon my recommendation and really liked them. Of course the price and size probably would have made my dad’s eye twitch, but the ingredients are so wholesome and clean it would be a shame to pass them up! Once again inspired though, on Monday before I left for school I whipped up some homemade bars with an ingredient that you’ll never guess (Hint: It involves recycling). These will be similar to the Acorn Squash recipe in that it will be more of a How-To with some measurement suggestions, but I’ll be making them again and can probably get a more accurate recipe for you all next week.

I’m hoping to get up at least one of these recipes on Friday, but if I’m absent, just know it’s because I have been swallowed by the vortex that is Spring Semester Final Exams. I have one on Thursday and one on Friday so Wednesday will be jam-packed with studying and trying ever so hard to not get on Pinterest/Hulu/Facebook/Netflix. But we all know that’s not going to be possible. 

Still, I am going to be quite busy this week in preparing for these end-of-year tests, packing up my dorm room, getting ready for my internship and moving (just under 3 weeks!) and taking care of some Financial aid stuff at school. Of course I’ll still be blogging, but if I’m late in responding or commenting, you’ll know why. 🙂

Final Exams + WIAW + My Favorite Christmas Movies

Two classes down. Three more to go!

I finished my Business Class last week with a presentation on Accounting. My last Critical Thinking class was today, and I received my final grade. All A’s so far!

On Wednesday I don’t have any classes or commitments, so it will be full of me studying, studying, studying. And oh, okay, maybe a few snacks and Netflix indulgences sprinkled in here and there.

On Thursday I have my two final exams in Ethnic Studies and Microeconomics. Spaced only 30 minutes apart… Ugh! Then right after my Microeconomics exam is scheduled to be over, I have to make a dash to the English building to pick up my graded Writing Portfolio.

Then right after that I have to get ready to head out to The Hobbit midnight premiere. I’m starting to have doubts about going though. It’s just so late, I’m afraid I’ll fall asleep. Plus, Thursday is my last day of exams, so I could actually go home that night!

As you may remember, watching The Hobbit midnight premiere was on my 13 Things to Do in the 13 Days Before the World Ends Bucket List. If I do end up skipping it though, I’ve already made plans to watch it with my friend from home on the following Saturday. We’ll see what happens!

Enough school talk. You probably don’t like reading about exams any more than I like taking them! Instead, let’s talk a little bit about food, and also I’ll share a (long) list of my favorite Christmas Movies.

Breakfast

On the drive up to school last week with my parents, we stopped at our mall’s GNC to buy some probiotics because I was almost out. While there, my mom happened to notice that they sold my favorite brown rice protein powder, so of course I had to pick up some of that as well! A one pound jug on Amazon can sell for as much as $20.00, but GNC had them priced much lower, and one of the two jugs that we bought was actually 50% off!

My breakfast for most of the days last week was my banana protein bread of course! One day all my dining hall had was teeny tiny bananas, so I bought two instead of a large one like I usually do. One banana went into the bread, and the other one I sliced up on top.

Lunch

The all-you-care-to-eat dining halls actually post their menus on Monday for the entire week, so I can always plan out when to go. For this lunch I took advantage of the fact that they already had some plain grilled chicken on the menu, so I didn’t have to special order it. On the side I had a salad of lettuce, carrots and cucumbers. I also sprinkled the chicken with just a little salt because my body just seemed to be craving the sodium!

Snack #1

I love rice. I really really do.

That’s why I was so excited to see a box of Minute White rice on the shelf at one of my college’s convenience stores. I have over $170.00 left for this semester and only three more days to use it (the money does roll over, but being realistic, if I have money left over this semester, then I’m probably going to have money leftover next semester as well).

So I bought the super-overpriced box of rice and have since used it all up! I’ll be buying another box tomorrow for sure.

I’ve been eating it plain and also mixed with chicken. I also like to mash the rice and add a little extra water to make it into a porridge. Fruit seems to be another great addition to rice, and for my snacks on Monday and Tuesday I cooked up a cup of rice and topped it with a large sliced banana. Full of carbohydrates and the perfect energizing snack.

Dinner

Nights lately have been getting so cold. Some it has even dropped as far as the low 30’s. This weather makes me hesitant to leave the nice, warm comfort of my room, so I’ve been finding myself going out for lunch, but staying in for supper.

This was one of those nights where I just heated up a few servings of chicken with a can of unsalted green beans.

Snack #2

These pictures will be the last that you see for a while of my protein powder adventures (probably). I’m going to be visiting a new holistic practioner who can hopefully give me some aid in figuring out new things to try for my digestion, and I’m pretty positive that cutting out grains is going to be a big part of it. From my stint with Paleo I know that quinoa does not bode well with me. I also know that rice both in its “pure state” as well as in its protein powder, while not as bad as quinoa, isn’t too good for me.

So, enjoy this last recipe!

It’s pretty similar to my Microwave Protein Crisp, but in a much larger and more delicious form!

Apple Banana Microwave Protein Crumble

High protein, high fiber, no sugar added, vegan, gluten-free, nut-free

Ingredients:

  • 1 banana
  • 1/4-1/3 cup brown rice protein powder
  • 1/2 tsp baking powder
  • splash of water
  • stevia (optional, but I didn’t use)
  • 1 apple, sliced

Directions:

  1. Slice the apple (peeled or unpeeled) and layer into a small microwaveable container.
  2. Mash the banana in a separate bowl. Add the protein powder and combine.
  3. Sprinkle the baking powder on top. Then, quickly pour a little water directly onto the baking powder until it starts to fizz.
  4. Stir it up fast as the baking powder will cause the mixture to expand. Take advantage of that volume and carefully pour the banana bread mixture over the apple slices and put the container in the microwave.
  5. Cook the crumble for 4-6 minutes until no longer gooey. Time will depend on size of banana, amount of water/protein powder used, and the strength of the microwave.
  6. Enjoy!
