Thinking Out Loud #2

Happy Thursday!

1. I know I said that I probably wouldn’t be doing Thinking Out Loud Thursdays very often, but I liked it so much last week that I couldn’t help participating again this week!

Thinking-Out-Loud

2. Two exams down. Three more to go. Tomorrow morning I have Business Communications at 8:30am and then Astronomy right afterwards at 10:45am. I already have a nap planned for the afternoon somewhere in the neighborhood of 2:00pm.

3. While I am really looking forward to Christmas Break, I don’t like all the work that comes before it. I have to defrost my fridge and mini freezer before Friday. Also we have to do a major cleaning of the common area in our dorm. Fun.

4. Even though it’s not Sunday, Arman’s Spill It Sunday link-up is still open so I figured that I’d jump on the chance to join in:

What is your favorite genre of film?

The real question should be- why do I have to pick just ONE? Action, Sci-Fi, Romantic Comedy, Musical, Adventure, Fantasy, Superhero… I think this would be better phrased as what kind of genres I DON’T like. Easy. Horror and Gross rated R comedies.

What is your favorite ever movie?

Boy Arman, are you full of tough questions this week! I would have to go with Harry Potter. And yes I know that there is more than one film in the HP series, and no, I am not going to pick which one I like best.

thursday-spill-it-hp

What movie do you think deserves to have never been made?

You all know my professed hatred for Chitty Chitty Bang Bang and that was the first movie that popped into my mind when reading this question.

thursday-spill-it-chittychitty

However, there is another movie with which I’m not even sure how it was conceived let alone produced. Bubba Ho-Tep.

thursday-spill-it-bubb-ho-tep

Just read the description and you’ll know where I’m coming from.

Mud Creek, Texas, is about to get all shook up. When mysterious deaths plague the Shady Rest retirement home, it’s up to an aging, cantankerous “Elvis” (Bruce Campbell) and a decrepitand black”JFK” (Ossie Davis) to defeat a 3,000-year-old-Egyptian mummy with a penchant for sucking human souls! Can the King show the world that he can still take care of business?

Here is a trailer in case you need more convincing. I’m sorry, maybe it’s just me and it’s a fantastic movie. For some reason I don’t think so though…

Wait! Hold up. I just thought of an even worse movie. Jack Black’s Bernie. We literally could not finish it and just skipped to the end so we knew what happened.

thursday-spill-it-bernie

What movie should be considered a legal sleeping pill?

The Avengers. Before you all protest, I will acknowledge that the second time I saw the movie it was slightly better, but the plot line was just not good. I fell asleep twice during the movie.

thursday-spill-it-avengers

If you made a movie, what would it be about?

I really want to see a new spy series. Jason Bourne, Mission Impossible and James Bond are so good but they all feature older males. It’s time for a new female spy series!

A movie which you love but you’d never admit…

I know that as a superhero fan I am supposed to hate the ones that deviate from the originals,  but I just love Batman and Robin with George Clooney.

5. Somehow I have watched six and counting episodes of Glee tonight. I saw one of the auditions on Youtube and got the sudden urge to rewatch the first season. I just love Rachel and Finn.

6. Ending on an even number today, I am so happy with all of the contributions so far with 12 Days of Allergy-Free Christmas Recipes! If you haven’t been keeping up, make sure to check out this page (also listed on my menu above) with links to all of the posts so far. We actually have all but one day filled, so if anyone is interested, let me know. And keep up the great work everyone!

Questions for you:

  • What are your movie favorites?
  • Are there any movies that you love but everyone else hates?
  • What are you thinking about on this beautiful (cold) Thursday?

My Newest TV Obsession (And the Pancakes You Should Eat While Watching It)

I think Raymond Reddingtion may be my new favorite fictional bad guy. I also may be slightly idolizing over Elizabeth Keen and her super exciting job (perhaps not the whole abused-by-father and my-husband-is-not-who-he-says-he is backstory though… but that’s beside the point).

In short, The Blacklist is my newest television obsession. It has all of the necessary must-have pieces to be a potential binge-watching series. That is, if I ever fall behind on watching it on Hulu the day after they premiere. Which is unlikely.

There’s an intriguing criminal, a relateable main character, a twisted, action-filled plot in every episode, and lots of hidden secrets. Basically it’s perfect.

Paleo Strawberry and Chocolate Chip Pancakes

So do yourself a favor and if you haven’t already seen this show, go watch it. Now. And if you have watched it already, go watch an episode again just for me. Or scavenger YouTube for the preview of next week’s episode (oh wait, I already did that for you 😉 ).

I repeat: Go watch it NOW.

But first, make these pancakes so you have something to delicious to eat during the commercial breaks.

Makes two batches of three pancakes

Paleo Strawberry and Chocolate Chip Pancakes

Ingredients:

  • 3 eggs
  • 1 tbsp honey (optional)
  • 1 small banana
  • 1/4 cup light coconut milk
  • 1 tsp vinegar (I used apple cider vinegar)
  • 1/2 tsp vanilla extract
  • 3/4 cup almond flour (or other nut/seed flour)
  • 1/4 cup coconut flour
  • dash of sea salt
  • 1 tsp baking soda
  • 1 cup strawberries, frozen or fresh, sliced
  • carob or chocolate chips/chunks (homemade)

Directions:

  1. Preheat griddle to 350 degrees (or a pan to about medium heat). Coat with coconut oil, ghee, or cooking spray to prevent sticking.
  2. Put all of the wet ingredients into a food processor and blend until smooth.
  3. Then add the dry ingredients and combine again.
  4. Using a 1/3 cup measuring spoon scoop portion out the batter onto your griddle in medium-sized circles, spreading with the back of the measuring cup if too small.
  5. Cook for approximately three minutes, then place a few strawberry slices and carob/chocolate chunks on each pancake. Cook for another minute or two until the side facing up is bubbly. Flip and cook for approximately four more minutes. Repeat with remaining batter and serve!

My Brother’s Birthday Party (WIAW Edition)

Some of you may have seen my taunting pictures on Monday and have waited to see the inside of the fabulous cookie dough cake that I made. Well, you are going to have to wait just a little longer (read: middle of this post for all of you desperate cookie dough lovers). 😉

This weekend we finally got to hold my brother’s birthday party since we had to cancel the original date on account of him being sick.

wiaw-bday-napkins

I spent most of Saturday making the birthday cake, doing some last minute shopping with my brother for ice and frosting, and doing a little tidying right before all of the teenage boys came!

For supper on Wednesday we ordered pizza. Lots and lots of pizza. Not for the faint hearted either with double pepperoni and bacon.

wiaw-bday-pizza-chips

Later on that night after it stopped raining all of the boys went swimming while my mom and I snuck upstairs to watch some Netflix.

wiaw-bday-netflix-love-kitchen

When they were done outside it was time for cake!

Cutting the cake… Almost there…

And finally the inside, complete with an amazing thick layer of buttercream frosting and cookie dough balls.

wiaw-bday-cake-sliced

Setting up an assembly line my mom sliced the cake, my dad plated them with forks and I… took pictures 😉

Just one more shot.

Okay. One more…

wiaw-bday-cake-inside

After the cake my mom and I watched another video, this time Rookie Blue, one of my favorite tv shows ever.

wiaw-bday-rookie-blue

Soon after I hit the hay but I’m pretty sure a majority of the house stayed up much later. Doing what exactly? My guess- watching horror movies and playing video games.

The food of course didn’t end with cake though. As soon as my parents were up we got to work on breakfast.

wiaw-bday-cereal

My dad cooked up the bacon on our griddle.

wiaw-bday-bacon

My mom baked the Pillsbury cinnamon rolls.

wiaw-bday-rolls-cooked

And I helped my mom cut of the bottoms when said cinnamon rolls got burned. 🙂

All turned out well though!

And that wraps up this special edition of WIAW!! Thanks to Jenn for hosting.

Have you ever been to a birthday party where either the host or guest had food allergies? I have never, but as an allergic girl myself I’m of course curious!

Allergy-Free Soup Recipe Round Up (FFF) and 3 Things I’ve Been Loving Lately

If you’ve been stalking my comments lately on other blogs (which, would totally be creepy, but kind of cool in a #fangirl type of way…) then you’d know that I have been saying for weeks that I need to make some soup. After all, it’s been in the cold 30’s for awhile now, which I think that also means that this post is way overdue.

Below is a collection of 6 delicious-looking soup recipes that I’ve happened across on the blog world. They are all super simple.

1 has beef.

2 feature butternut squash.

3 contain apples.

4 are vegan.

5 use no sweeteners.

And 6 are egg-free, grain-free, nut-free, tomato-free and bean-free!

I also want to share three things that I’ve been loving lately:

1. Book

The Girl of Fire and Thorns

Once a century, one person is chosen for greatness.

Elisa has always felt powerless, useless. Now, on her sixteenth birthday, she has become the secret wife of a handsome and worldly king—a king who needs her to be the chosen one, not a failure of a princess. And he’s not the only one who seeks her. Savage enemies, seething with dark magic, are hunting her. A daring, determined revolutionary thinks she could save his people. And he looks at her in a way no man has ever looked at her before. Elisa could be everything to those who need her most. If the prophecy is fulfilled. If she finds the power deep within herself. If she doesn’t die young.

Most of the chosen do.

girl-of-fire-and-thorns

I just finished this amazing book at about midnight last night. The Girl of Fire and Thorns is considered fantasy by most, but it was very mild. The coolest part of the book was how the author addressed body image and self-worth in a fantasy/long-time-ago context. Body image wasn’t the main plot of the story, but more of an underlying theme, which I thought was very profound and moving.

2. Movie

Batman Begins

Batman Begins explores the origins of the Batman legend and the Dark Knight’s emergence as a force for good in Gotham.

batman-begins

I’ve already seen this movie about a dozen times or more, but a group of my friends always get together every Wednesday to watch some type of Batman-esque show. We’ve watched part of the animated series, and all of the old batman movies. This past Wednesday we made it up to the most modern trilogy with Christian Bale. It’s so neat to see how everything has changed! He’s no George Clooney, but I adore this movie all the same.

3. TV Show

Dream High

Six students at Kirin Art High School work to achieve their dreams of becoming stars in the Korean music industry. During the drama, the students learn how to develop their singing, songwriting and dancing skills while also undergoing personal growth. Each one of the students have their own strength and their own weaknesses, but with the support and guidance of each other, they strive to debut on stage.

dream-high

This TV show was a recent find on Netflix, and in just the past week I’ve managed to make it through 7 hour-long episodes. It does have subtitles, because the main characters don’t speak English, and while I normally hate subtitles, there is just something about this show that makes me want to keep on watching. It’s somewhat cheesy, but the emotions of the actors and actresses are much deeper than I first expected. There are two seasons, but they have different main characters. I don’t think anything can beat Season One.

———————————————————————————–

I know I said in my last post that I was going to talk more about how I’ve been feeling lately, and some dietary changes that I want to make, but that’s just too depressing for this beautiful Friday. The post will come eventually, when I’m ready, but for now I just want to enjoy the holiday season, free from worry!
