Spilling It in the Longest Post Ever (WIAW + Recipe)

Is that title daunting? Well, it’s daunting for me too. I basically fell out of the technology world for the past few days during my Thanksgiving break weekend. It wasn’t entirely on purpose though, thanks to my cellphone which has decided that while it will turn on, it will not STAY ON. So I just have a vibrating phone that won’t charge, and turns on and off every 30 seconds. Tis the season to be thankful, am I right?…

So with that said, you now know why I have not been commenting on blogs recently or been very present on this one. My blog life is basically tied to my phone and that is not being over dramatic in the slightest. All of my pictures are on that puppy, along with my WordPress app where I write a lot of my rough drafts and notes… And that’s where I comment a lot of the time too (so whenever you get some weird comment from me that is completely devoid of all grammatical integrity you’ll know it’s because I’m on my cellphone).

Thankfully my phone worked for a time slot of approximately 30 minutes yesterday where I promptly downloaded all of the photos I needed for today’s post, and quickly texted my mom to let her know I was alive but phone-less. Then it went back into a continuous state of on/off. *Sigh* Life is rough.

Aside from my ever unnecessary introductions that really serve no purpose whatsoever except to let me wax my wordy ways on you and give me an excuse to talk about something other than food…

What is your cultural background?

Haha. Okay, so getting a little more specific than that I think I have some German and Scottish heritage but don’t really know much other than that. I have some family history books at home that I should read someday so I can answer this question more accurately in the future.

When was your most memorable birthday and why?

I would have to say that my 16th birthday was my most memorable. I didn’t have a party or cake but I was on a high school band trip back from Disney when I turned 16. After one rest stop I came back on the bus to a whole bunch of noise makers and shouts of “Happy Birthday!” I thought that was pretty cool of them.

What is your #1 thing you want to accomplish in your lifetime?

To feel like I am doing what I’m supposed to be doing. I feel like there is nothing better than to know that you are on the right track and doing what you were born to do.

What is the stupidest thing you’ve ever done?

How about this past Saturday when I dropped a hot crock pot on my foot? Does that count?

Who was your childhood hero?

As a kid I always looked up to the usual television stars like Hilary Duff on Lizzie McGuire, or Britney Spears who was just a music idol. But really my childhood heroes were probably the authors that I always read. Carolyn Keene specifically, who wrote Nancy Drew. I thought she was just amazing and I wanted to be just like her when I grew up. Then years later I found out that she wasn’t a real person and my dreams were crushed. Like I said… Rough life.

I was planning on sharing about my Thanksgiving in today’s post, but I’ll leave that for another day and get on with WIAW and a recipe!

As you could probably tell from my Pumpkin Apple Streusel Muffin post, I am a proud new member of The Recipe Redux community. Every month there is a new theme that we can post recipes around. There is also often a product-type sponsor where we are sent a food product to try out for free and to incorporate into a brand new recipe. This month was all about Monk Fruit in the Raw. It is made from the same company that also makes Stevia in the Raw, Sugar in the Raw, etc.

Monk Fruit in the Raw

I’ll admit that I was at first hesitant to use the product because artificial sweeteners kind of scare me. Monk fruit, like stevia though, is not artificial in the slightest and actually comes from a plant! Made from delicious vine-ripened monk fruit, also called luo han guo, it’s the zero-calorie* sweetener that tastes like sugar. Originally harvested in the 13th century, it’s been making life more delicious for years now.

Pretty interesting. I’ve already used it twice and have been impressed with the results so far. I’m not sure that I will be using it in future recipes, but it’s good to know the healthier alternatives out there. If I ever need to make something for a sugar sensitive individual though, I will definitely keep Monk Fruit in mind. (Here is a FAQ if you have any questions about it. For quick reference, Monk Fruit in the Raw is gluten-free and vegan. It does contain maltodextrin though which is not safe for those with corn allergies).

The first recipe that I made was a kind of Amish Friendship Quick Bread which I will hopefully be able to share with you soon as it was an enormous success with both a regular and grain-free version.

Amish Friendship Bread

The second recipe, which I am going to share today for WIAW is so simple that you probably have most of the ingredients in your cupboards already if you are into grain-free baking like me. No coconut flour in this one, but almond flour and Monk fruit in the raw make up the bulk of the dry ingredients, and yogurt provides most of the moisture. Add in some apple chunks and cinnamon and this is one tasty potential fall breakfast!

Easy Apple Cinnamon Pancakes (Grain-Free with Nut/Dairy-Free Options)

Easy Apple Cinnamon Pancakes

Grain/Gluten/Wheat-Free, Dairy/Nut-Free Option, No Sugar Added Option, Paleo

Makes 2 servings, 3 pancakes each

Easy Apple Cinnamon Pancakes (Grain-Free with Nut/Dairy-Free Options)

Ingredients:

  • 1 cup almond flour (any nut or seed flour would work)
  • 2 tbsp granulated sweetener*
  • 2-3 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1 egg
  • 1/2 cup plain yogurt (use coconut to make dairy-free)
  • 1 tbsp melted coconut oil (ghee/butter would be fine to0)
  • 1 cup chopped apples (about 2 small apples)

Directions:

  1. Preheat your griddle to 350 degrees or your skillet to medium heat. Coat/spray with oil if necessary to prevent sticking.
  2. In a medium bowl combine your dry ingredients. Then add the egg, yogurt and oil mixing until thoroughly combined.
  3. Using a 1/4 cup measure out your batter and pour onto the griddle/skillet. (You may need to spread the batter out a little bit to get the right size.)
  4. Sprinkle some of the apple chunks over the pancake, pressing down if necessary. Cook for 2-3 minutes or until the side facing up is bubbly. Flip and cook for about another 2 minutes. Top with more apples if desired!

*I used Monk Fruit in the Raw for the granulated sweetener to make these pancakes no sugar added, but you can use any granulated sweetener that you have on hand that fits your dietary needs). If wanting to use honey/maple syrup I would recommend using only 1/4 cup yogurt and increasing as needed to get the desired consistency.

    Cell phone story? Ok so earlier this year I was using my phone at the gym whilst on the Leg extension machine, between sets I put it down to rest on part of the machine not realizing it was a moving part, when I did my set the phone dropped and the screen didn’t crack but made the phone stop working.

Thanks so much for linking up- Oh grand Name Giver 😉 Urgh I spent a good 3 years keeping my iphone is pristine condition and was bragging to my mate at the gym how it still had the plastic on it- put my phone on the LAT pull down seat and the stupid grip slipped off and dropped on my iphone scratching it! Came to bite me back!

  3. I got a couple of sample packets of the monk fruit sweetener, I think it was called Nectress or something like that. Didn’t realize you could buy it in the “in the raw” version I’ll have to look at it. Good grief…your poor foot! Being a big crock pot fan…did the crock pot survive. Hope YOU are healing well.     • Sadly the crock pot did not survive. After hitting my foot and burning it the crock pot dropped onto our garage’s concrete floor and shattered 😦 Coming from a crock pot fan too I was not happy. Thankfully we had another one, and my mom went and bought a replacement for the one I broke that night so that we could cook more food for me to take up to school on Sunday.

      I’ve never had this bad of a burn before so I’m not sure but I think it’s getting better?

  4. My cellphone was doing weird things on Wednesday – I’d click on messages or on the phone icon and the screen would flash and then go back to the home screen. I turned off the phone, turned it back on, and all of my contacts were gone. But somehow in about three minutes they came back. Time to get a new phone before I’m really upset.

    • Sounds like we are having similar issues! Before mine decided to not come on at all it was doing funky stuff like that! I hope that you can get a new one without having to pay much. I’m a little worried that since my contract isn’t up I’ll be forced to pay full price for one. *Fingers crossed*

    • That wasn’t even the end of it. Haha. I think I just jinxed myself because I broke another small bowl the next day and my brother laughed and asked “What’s with you?” Hmm… I *may* have been a little snappy in my response back…

      Exactly. I may even like it better than my laptop because it weighs so much less!

    I love pancakes, they are amazing. My sister made some for breakfast the other day and since I already ate I smeared some peanut butter on some and brought them to eat for lunch 🙂

  7. Eee. It feels sad to say it, but I honestly have no idea how I’d function without my phone. I had to go without it for a few days around this time last year after I dropped it and the whole screen shattered on me, and that was difficult enough. Hope it works itself out soon!

    • Me too Amanda! I’ve not had the greatest luck with phones. I actually “drowned” two of phones at the exact same time when we were switching from Verizon to Sprint in high school 😯 Oy, was that fun to explain to my parents why my water bottle wasn’t closed all of the way and just destroyed two expensive electronics…

    I’ve never even heard of monkfruit as a sweetener, but it sure sounds like it’s worth a try. Artificial sweeteners scare the crap out of me too, so I’m all about finding natural alternatives!

    • We must be pancake fiends in our house then because every weekend I’m home I make up at least two batches of pancakes for my parents for breakfast 🙂 Let me know when you get the chance to try it

      That’s why I usually just use honey in my recipes, because it seems to be one of the safest of the bunch. But I was really intrigued when reading about the monkfruit. Definitely a good option to look into!

  9. I can’t wait for the recipe for your grain-free Amish bread. I haven’t really had that much experience with Monk fruit (there’s a gluten-free, dairy-free, soy-free, coconut ice cream that uses it though, and that’s pretty darn good).

  10. Yikes! Crockpot on foot looks pretty painful. I work in a hospital as an X-ray tech and by far you topped my foot X-rays stories. Though I did X-ray someone’s skull with a acorn fell on her head. I guess that belongs to the funny ridiculous category 😛

    Two bad cell phone storys to make you feel better:
    1. My mum used to work as a chef. Once she placed her cell phone on a shelf. Later she put a jar of honey on the opposite side of the shelf causing a chain reaction which ended with her phone flighing off the shelf right into a giant bowl of honey mustard dressing. She later told me she watched the entire time unable to stop it. Oh my gosh I was shaking with laughter 😀
    2. My phone (my first cell phone ever) started to switch off after 1 minute after some time. I started it again and again for a few days until I got so mad that I threw it against my bedroom wall. Unnecessary to say it never started again 😛 So don’t get too mad about your phone 😉

  13. Spill it Sunday is adorable! I only found out about it from veggiedancer’s blog.
    My culture is also American. I’m 1/4 unknown (the info is out there; I’d like to look it up; my paternal grandfather was adopted by his step dad who had French background so my maiden name is French), 1/4 English, 1/4 Scottish, 1/4 Welsh. I know a lot about this. I know my family scottish tartan and my family coat of arms, etc. Heath is 100% English.

    I sometimes think of my American culture like this: Both of my dad’s parents were from Missouri; they met at University of Missouri and got married before graduation. My grandmother finished university and went on to get a master’s degree of library science. My grandfather joined the army. After the army, my grandfather’s job was salesman for an aerospace parts company. My dad was born in Fort Worth, Texas. He has two older brothers also born in Texas. When my dad was a kid, they moved to Cape Canaveral, Florida, where my dad’s school class would go outside to watch rocket launches. Then my dad’s family moved to upstate NY (I don’t know the name of the town). When my dad was older, they moved to Del Mar, California. When my dad was 15, his dad had an affair and left his mom. So my dad and grandmother moved back to Missouri to live with her parents who built coffins. (My grandfather’s parents owned a big antique store). My dad finished high school in MO and recieved a full scholarship to the University of Missouri because he got a perfect 1600 SAT score. After one year of school, in 1975, my dad dropped out to take drugs and hitchhike across the country. Which he did. Well, my dad’s past is his business but he was gangsta. He had a long pony tail, rode a motorcycle, and lived in the woods of Alaska and Hawaii. In the mid 80s, he lived in Juneau Alaska, he had just bought a house some help for the down payment from a loan from his mother which he eventually paid back. Well, that’s where my dad met my mom.

    My mom was born in Seattle, Washington. She is the third of four children. Her dad was from Port Angelas , Washington where his parents owned a shoe store. He joined the army when he was 18, but his passion was painting. He was in service during the Korean war, but was stationed as a forest fire lookout in Germany. Before and after the war, he was stationed in Fairbanks, Alaska where he fell in love with the state. My grandpa was very into the Pacific Northwest culture of mountain hiking and camping. He met my grandma while he was in the army, stationed at Seattle. My grandma is from near LA, California. She and her younger brother were severely abused and neglected. She has told me she thinks her father and step father were both damaged by WW2. She graduated high school when she 16 and moved away to Seattle. She worked at Sears and then got a job as a telephone switchboard operator. She and my grandfather met a few blocks from where Heath and I lived in Seattle (we moved 6 months ago). My grandma had her first baby at 19, and had the next three year after year. In the mid to late 60s, my maternal grandparents got into the drug scene. My mom and her siblings ended up neglected and went to live with my grandpa’s parents in Port Angeles for a year. My grandpa moved up to Alaska to find work. He found a cabin to live in with a bunch of other men but no room for his family. My grandma divorced him. She moved herself and her kids up to Alaska and got a job working on the pipeline. You might not know but working on the pipeline is ubiquitous with using cocaine. Anyway, my mom and siblings lived on their own and were homeless. When my mom was 15, she got a job and MacDonald’s. My mom worked in food service for a long time. She is really into natural foods and was a vegan and lived in a vegan coop in Arizona when she was 19. My mom’s family is really close. She and her siblings variously lived with or near my grandfather and they were all friends who partied together. My mom lived all over Alaska, California, and Hawaii. She met my dad in Juneau, Alaska at her brother’s house.
    I was born and raised in Juneau, Alaska and then moved to Seattle, Washington when I was 19.

    I made pancakes the day before Thanksgiving out of leftover pumpkin pie filling. 🙂

    If it makes you feel ANY better, my cell phone was once stolen from me…practically right from under my nose. It was the holidays and I was working retail. These two guys came in together…one ended up tricking me into giving him too much change back while the other reached over the back of our cash register counter and took my phone. It was horrible!

    On a happier note, ahhhh, Lizzie McGuire! I used to watch that show with my sister all the time! Loved it! Sadly I was never into mystery novels when I was younger so I never read a Nancy Drew book…but I might have to try picking one up some day for a fun read!

    Can’t wait to see the recipe for the friendship bread! I just saw that monk fruit stuff advertised on tv the other day and was curious about it…I had no idea it was the luo han guo…I’m pretty sure that ingredient’s in Quest bars! The pancakes sound amazing! Can’t go wrong with apple and cinnamon! And can you believe it’s been like THREE weeks since I’ve had a pancake?! Craziness!

      My parents still to this day don’t know Hilary Duff’s real name and instead just call her Lizzie McGuire. I think she’s guest starring on some show coming up maybe? And my dad say “Hey look! There’s Lizzie McGuire.” Just no. Drives me batty.

      I think I could live without technology if everyone else in the world gave it up. It’s just that when I’m the only one without a phone/laptop the world goes on without me and I seriously get behind on everything!!

      You DO spot a Vera Bradley bag! I lug around all of my books in it. Don’t you just love the pattern? We got it on sale last Christmas because my other bags just couldn’t hold up to the weight of my school things.
