A Bit of Randomness (Stomach Update + An Award!)

Thanks so much for everyone’s comments on my last WIAW: What You Need to Know About Your Produce. There was some great discussion and questions going on. Lots of learning all around!

So today was supposed to be a good day (Thursday). Both of my classes were cancelled for tomorrow due to final exams next week, and I had the highly ambitious plan to pack up after my last class today and drive home for a three day weekend.

Then I had lunch.

Hold up. Let’s rewind a bit. So, I haven’t been doing a very good job of keeping you all updated with how GAPS is going for me and what the status is on my stomach healing protocol. The main reason is that not much has changed. I am still only eating meat and a very minimal selection of vegetables. Soup is still on the menu for every meal of the day.

Like I said last time though, I am better. My stomach is not always as bloated as it once was.

But that is about as far as the results have gone.

The biggest problem is that I just can’t tolerate probiotics. Not the pill form nor the naturally occurring probiotics that you find in food like sauerkraut. For awhile I thought that I might be able to, but then when I kept on getting worse I had to cut them out again. Recently I’ve been taking small amounts of beet kvass along with ox bile for fat digestion because that’s not going so well either.

A lot of words and not much to report. In past posts though I’ve held back a little bit with what my symptoms are. The main reason is because I don’t want to complain. I still don’t want to complain and I’m trying to keep this post as sarcastic-free as possible. However, I did say awhile back that I was going to be more honest and right now with my stomach feeling terrible (from the aformentioned quote of “And then I ate lunch.”), I guess there isn’t any better time than now.

I don’t know a good way to go about this so I am just going to ramble on a bit more. Here it goes, my symptoms for the breakdown: bloating caused by anything from no identifiable causes to perhaps eating too many vegetables or “too large” of meals (think of a full soup bowl as “too large”… 😦 ), stomach pain if my meals are “too large” or again from hidden causes, alternating extreme bowel issues (severe pain from either side of the spectrum that may last a few days on end and wake me up in the middle of the night), acid reflux/burning feeling, the feeling of a heavy stomach, nausea, trouble staying asleep occasionally, irregular periods now persisting for about 15 months (I think I’ve had maybe four since then with one induced by artificial hormones from an OBGYN…. never again!), brain fog and trouble concentrating (<< these have both decreased significantly though since eliminating my allergies), mood swings, stomach cramps….

I’m probably forgetting a few but these are the only ones that I can remember right now. On a good day I only experience a few of these things. However on an extremely bad day all of these symptoms may plague me.

That does not mean that I am giving up GAPS. I still believe that it is the only thing that is helping me right now stay away from everyday being an “extremely bad day.”

It was 15 months ago that all of my problems started. I’ve seen 2 GI doctors, an allergist, a pediatrician,  a chiropractor (my GAPS practitioner right now), a holistic nurse, and an OBGYN. I was prescribed multiple medicines by the first GI doctor, none of which worked. I had several blood tests run along with other common procedures like two ultrasounds and a colonoscopy/endoscopy (with mild gastritis diagnosis). I’ve taken dozens of supplements. I’ve eliminated about 90% of the food I used to eat including all of my allergens (wheat, rye, peanut, egg, dairy, tomato, celery).

I feel like I’ve done everything under the sun with still no answers. I feel like no one understands.

But that isn’t true, is it? There are many out there that have it worse off than me. They truly have no one around that understands or cares.

And that’s why I know that I’m not giving up. Not even close.

Actually, I have another possible test coming up soon and I’m going to schedule another GI appointment if nothing shows up with that.

With that done I don’t really have anything left to say as far as my stomach goes. If you read through all of that above, I’m sorry because I think I failed at my attempt to not complain. I’m also sorry because more than once I probably provided you with too much information (And despite what some people may say, there is totally a thing such as TMI!).

I digress though, and not so subtly I will move onto another topic entirely.

Because that’s what I do. I randomize the heck out of my blog posts.

I think the first half of my Friday post was a teensy bit depressing. Okay, maybe a lot. So to balance it all out, I’m going to share something super fun!

This actually came at the perfect time in my opinion because nothing can brighten a dreary day like a good old-fashioned survey. 1. Are you a city girl or a country girl? I think I may have mentioned this on the blog before, but I am a total country girl. I live down a long gravel driveway surrounded by acres of cornfields, my backyard is comprised of a nice thick woods complete with creek, and in high school I was involved with FFA (Future Farmers of America). Also, my high school had drive your tractor to school day which is quite the sight to see and as a member of FFA we got to vote on the best ones!

2. What’s your favorite movie? I really dislike this question as it is SO hard to pick a favorite. So instead I am going to just go with the last movie I watched- Olympus Has Fallen starring Gerard Butler, Aaron Eckhart, and Morgan Freeman. Loved it!

  • A flint striker to start a fire.
  • A knife to crack open all of those coconuts and dig into the gourmet fish that I would cook over the fire every night…
  • And a water filter. You may laugh, but try drinking sea water for days straight and see how you feel then!

I feel like because I haven’t had real food in so long I can cheat on this and list a few things: peanut butter, peanut butter and jelly sandwiches, chocolate chip cookie dough ice cream (bet you didn’t see that one coming…), bananas, baked sweet potatoes, and shrimp.

Peas Please! (WIAW)

You guys are fantastic, do you know that? There have been literally so many comments in the past few days that I just haven’t been able to answer them all! Plus, I have “life overload” right now. School work, internship applications, summer job applications (What?! There is still snow on the ground for crying out loud!), and lots of things to do when I’m home on the weekends…

Like going to basketball games. And working in the concession stand during varsity basketball games— Let me tell you: it’s crazy! My weekends also involve a lot of fun food stuff:

Look for a future post on this gluten-free bread sometime soon! My mom and dad cannot say enough good things about it, so I’ll just take their word that it’s amazing 🙂

This WIAW month however is not about bread. It’s about vegetables!

For starters, let’s talk about how amazing peas are.

Peas Please!

Just a few fun facts that I found interesting regarding these lovely green seeds (Source): 

  • Peas are relatively high in protein compared to other vegetables (5.4 grams per serving).
  • Two of the most popular types are sugar snap and snow peas.
  • Peas have been around for a very long time. The oldest was found in a cave in Burma dating back 9750 years.

I have been eating a lot of other vegetables as well, in the form of Chicken, Carrot and Yellow Squash Soup (with Coconut Oil)

I can’t even remember the last time that I had spaghetti. It has probably been almost a year. With wheat allergies and grain sensitives, regular pasta is out. And with an allergy to tomatoes, traditional spaghetti sauce is also not an option. So, I had to get a little creative in the kitchen. It ended up turning out pretty tasty, despite the nontraditional colors!

Tomato and Grain-Free Spaghetti and Meat Sauce

Allergy-free, Tomato-Free, Grain/Gluten/Wheat-Free, Egg-Free, Milk-Free, Nut-Free, Low Carb, Paleo, GAPS Diet Friendly

1 serving

Ingredients:

  • 2 cups spaghetti squash (cooked using the oven method)
  • 1 cup grass-fed ground beef (cooked in beef broth)
  • 2 cups broth (I used beef broth)
  • 1 zucchini, peeled and sliced
  • 1/2-2/3 cup squash, raw or cooked (I used butternut squash, but any kind would work)
  • sea salt and other seasonings to taste (black pepper, Italian seasoning, garlic/onion powder, parsley, etc.)

Directions:

  1. Prepare the spaghetti squash and ground beef.
  2. In a medium-sized pan add the broth, zucchini and squash puree. Bring to a boil and cook about 10 minutes or until zucchini is tender (cook longer if the squash is raw as well).
  3. Drain the vegetables and place in a food processor. Blend until well combined and smooth. Mix in the ground beef.
  4. In a serving bowl measure out the cooked spaghetti squash, then top with the meat sauce. Season with sea salt and any other desired seasonings. Enjoy!

Note: After baking the spaghetti squash I like to cook a single serving in more broth to make it tender and more flavorful!

So far this is as close as I have been able to come in replicating the taste of spaghetti and meat sauce with the restrictions that I have. I’ve heard that carrots can also be a great substitute for tomato in recipes, so I’ll have to try that out next.

I have to say though, that for those without food allergies, this probably seems like a pretty odd recipe. Some may even call it strange.

What I Ate When My Toes Almost Froze Off

If you know me at all, then you know that I’m usually a very hard worker. When it comes to certain things though… not so much. One of those “things” is walking the fifteen minutes to my car every Friday.

Last semester my parents drove me to school so that we could save money on car insurance (it costs extra for keeping cars at college). This semester however, I had to buy a parking permit and drive myself. Since I’m no longer on my school’s student meal plan (well, I’m trying to get off it at least) I have to go home every weekend to make the food that I’ll eat for the following week.

The 2 hour drive itself isn’t bad. There are tons of interesting radio stations on during Friday afternoons. Last week I listened to everything from cheesy jewelry store advertisements to a talk show about gun control, from the good time oldies, to my favorite station- country music.

What is bad is the fifteen minute walk to my car. In the cold. Through snow.

What is bad is making it through that long excruciating walk, and then this happens:

Yep. My Friday was basically ruined when I found out that my car wouldn’t start. Here I was all packed and ready to go, with just a teensy little huge roadblock standing in my way.

So, I called my dad and asked for his advice. Then I walked back to my dorm room and called AAA. I waited on the phone for probably twenty minutes and got disconnected within the first five. The lady who finally answered was pretty snooty, but in the end she wished me the best of luck and hoped that I’d get everything worked out.

Needless to say that when I hung up I started to cry.

A big wave of emotion hit me like a freight train. They were sending a tow truck in 45 minutes to try and jump start my car. I should have been ecstatic. But instead I was just so upset. First of all, I had eaten my last morsel of food for lunch, expecting to be home by five for supper. Second, when I talked to my dad, I was pretty rude and strung out. Not good. And third, my car stopped working. In the middle of winter. And there was no one I could share my grief with at school. My roommate was gone for the weekend, my one friend lives off campus, and the others were off with their boyfriends.

So, I trudged back out to my car and waited for 30 minutes by myself. I attempted to stay warm by using a small blanket that I found in the back, and rubbing my hands together inside of my gloves. But let me tell you– It was COLD. Like, upper-teens cold with wind chills in the single digits.

The tow truck arrived in pretty good time and the operator was so nice. He was incredibly patient as I explained what happened, and within minutes my car was running.

When I drove back to my dorm to pack up my things, I seriously couldn’t feel my feet. I changed into a clean pair of fuzzy socks and shoes since my others were soaked from melting snow. And low and behold my toes were a bright bright red. You may laugh, but I actually had a little difficulty walking for the first few minutes as my feet thawed out.

To conclude this miserable (and yes, somewhat melodramatic) story, I made it home safe and sound just before 8:00. About 3 hours later than planned, and boy was I starving!

For this WIAW, I’m going to share with you a few of the things that I made after My Toes Almost Froze Off.

First up, a picture that I took at school, but one that I’ve also enjoyed at home a countless number of times: Beef and “Noodle” Soup (made with peeled Yellow Squash, drizzled with olive oil and sprinkled with sea salt). Extra broth alongside.

Next is another favorite of mine: Glazed Carrots (cooked carrots topped with coconut oil).

Finally, I want to share a new GAPS recipe that I made this weekend. It’s adapted from a Friday Food Find I did a few weeks ago, and it’s seriously awesome.

And it’s perfect for using up the half of a cow that we purchased this last week! We got all of the different cuts from ribs to roasts, from ground beef to stew meat. This cow is from a local farm and it was grass-fed and pasture-raised:

Anyways, moving on to what I made:

Shepherd’s Pie

Adapted from Heart of Cooking

Allergen-Free, Grain-Free, Egg-Free, Dairy-Free, Nut-Free, Vegan/Vegetarian Option, GAPS, SCD, Paleo

Ingredients:

  • 2-3 cups squash, mashed (alternatively you could use cauliflower puree)*
  • 1 pound grass-fed ground beef*
  • 1 cup peas, fresh or frozen
  • 3 large carrots, chopped (around 1 1/2 cups)
  • 1 zucchini, peeled and chopped
  • 2 tbsp coconut oil plus more for pan
  • water or broth for cooking vegetables
  • sea salt

Directions:

  1. Preheat oven to 375 degrees and coat a 8×8 casserole dish with coconut oil.
  2. In a large pan, add a few cups of water (or broth) and your ground beef. Cook on high, breaking up the meat. When almost done, add all of the vegetables. Let cook for an additional ten minutes or until soft.
  3. Drain the vegetables and meat and spoon into greased pan. Sprinkled with a little sea salt.
  4. In a separate bowl mash the cooked squash with 2 tbsp coconut oil. Spread this mixture evenly on top of the vegetables and meat. Sprinkle with a little more sea salt.
  5. Bake for approximately 20 minutes and enjoy!

Variations:

Vegetables- Any vegetables would work well in here. Onions or broccoli would fantastic to add, I just used what I had on hand. Any kind of squash would work great in this recipe. I used a combination of mostly butternut and a little acorn.

Meat- Any kind of meat would work in here as well. My mom made one with shredded chicken and I think I might give that a go next. Ground lamb would be fantastic.

Vegan/Vegetarian- For an alternative to the meat, I think that cooked lentils (about 2 cups worth), chopped mushrooms, or a meat substitute would all be lovely in this dish.

This weekend, as you know, was an extra long one with Monday off for Martin Luther King Jr. Day. Extended weekends are the greatest. I got to spend a lot of time with my family, cooking, and a little bit of shopping thrown in. Grocery shopping that is…

Since starting GAPS in December, both of my parents have now joined me in whole foods living. My dad is currently a few stages ahead of me on the Intro Diet, while my mom started right onto full GAPS because she doesn’t have any digestive issues to begin with. Both are feeling great and are really embracing this new lifestyle. I am seriously so proud of their effort to eat clean. Their eating habits have changed dramatically since I wrote this WIAW post entitled Me Vs. Them.

Another positive to having parents on GAPS is that now we eat some of the same food. On Friday when I came home my dad had a bowl of chicken and vegetable soup simmering on the stove to share. That is the first time in over six months where I have been able to eat the same thing as my parents for supper. It’s quite a surreal feeling.

Also, on this whole foods journey I’ve introduced my dad to some awesome food. Like squash! At first he couldn’t stand it… Ya. I know. Who is this man?

Well, eventually he came around. He’s still not much into spending a lot of time cooking though, so I knew I had to figure out a quick, painless way to cook squash that he could do during the work week. Sure, he could have microwaved it, but we all know that microwaving isn’t the safest method of cooking. And slicing takes way too much effort…

So, with a little searching on pinterest, I came up with a method that is relatively pain-free:

How to Cook Squash in the Oven Painlessly

Ingredients:

  • 1 whole squash, any kind
  • 1 oven
  • 1 pan

Directions:

  1. Preheat oven to 375 degrees.
  2. Place whole squash in the pan and bake for 1-2 hours.
  3. Check after 1 hour with a knife. When it goes clean through, it’s done.
  4. Cut in half and then scoop out the seeds.

Note: For squash that you can cube, bake on the lower end of the cooking times. For squash that comes off the skin easily and is soft enough to puree, bake closer to the 2 hour cooking time.

Hmm… Super easy, right? I don’t know why I didn’t think of this sooner? No peeling or slicing, and the seeds are so much easier to remove after the squash is cooked.

After I let the squash cool, I store it in a Pyrex container in the fridge. As I’m scooping and cutting, I tend to snack on a lot of squash (maybe too much sometimes? Hehe). My favorite way is to just slice butternut squash into wedges and eat. They kind of remind me of chomping on orange slices as a kid.

Over the weekend I also made another batch of Cauliflower Rice Risotto with some of the butternut squash that I cooked.

I let the risotto cool in the fridge again, then I topped it with some crock pot chicken and sweet peas.

Other than food I also got to go to one of my brother’s basketball games. That was probably the highlight of my weekend; my brother is over six foot, so he is pretty good at stuffing players and blocking shots.

Last week I shared a picture of my dog Lilly, but my other pets got jealous. Now it’s their turn!

It was pretty cold over the weekend, so my dad let our larger, outside dog Riley in. We enclosed our kitchen with chairs so that he wouldn’t make a mess of the rest our house, but he was perfectly content with visiting with everyone and getting petted. He is such a sweetheart! I tried to get a good picture, but he just wouldn’t sit still.

Scout also wanted to get in on the action. She’s such a little diva. As soon as we emptied one of our paper bags from Whole Foods, Scout hopped right on in and started messing around. Cats just LOVE boxes and bags. She actually let me carry her around in it for a while.

And let’s not forget Apollo, my brother’s cat who he dubbed “Introvert.” He’s not exactly a people person…

A successful experiment on my mom’s part.

She experimented in making some homemade dressing made from lemon (or orange?) juice, olive oil, and salt. One half she used plain, and the other she mixed with some homemade yogurt. For a snack she dipped a few organic romaine lettuce leaves into the two dressings. She was very impressed, especially with it being GAPS legal.

And a not so successful experiment on my part.

I’m always looking for new ways to incorporate protein powders into dessert for my brother to try. He can use all of the bulking up he can get with basketball! Last time it went over well, but I guess this time I made one too many substitutions when making these no-bake cookies. I personally think it would have tasted awesome, but he’s very very picky.

Of course, since it’s WIAW, I should probably include some of my regular meals lately. Just because I’ve been eating a lot of soup, doesn’t mean I don’t make up some delicious combinations!

At home for a snack I cooked up two sliced carrots and shredded chicken in a little broth until tender. I drank the broth on the side (it’s so sweet and delicious from the cooked carrots) and I topped the carrots and chicken with a little coconut oil and sea salt.

At school today I peeled and cooked yellow squash “noodles” in chicken broth. I topped the squash with a large strip of chicken, sea salt and rosemary. After I took this picture I also added a nice big drizzle of olive oil.
